This session will explore the environmental impacts of food service through the lens of the Green Seal Food and Beverage Standard (GS-46) for food service operations and will explore the relationship of this standard to the APEX/ASTM F&B standard.

What are the real environmental impacts of food service operations? How can they be reduced? How does an operation decide what to do to make significant environmental improvements? How can an operation be recognized for their efforts? Green Seal conducted lifecycle research on a range of food service operations to identify the leading sources of environmental impacts from food service operations. The results of this research will be discussed and how operations can include these findings in order to have meaningful environmental improvements.

Included in the discussion will be an overview of the Green Seal comprehensive standard for environmentally responsible restaurants and food services (GS-46) and how the standard can be used as a resource for food service professionals and those who purchase food services. GS-46, the Green Seal Environmental Standard for Restaurants and Food Services, has been designated by the American National Standards Institute (ANSI) as a national standard, and provides a publicly developed, lifecycle-based roadmap that outlines specific criteria for responsible food service operations
